Liquid Gold from a Once-Every-Two-Years Bloom
Jarrah Honey is sourced exclusively from the native Jarrah tree (Eucalyptus marginata) of Western Australia — a species found nowhere else on earth. The Jarrah tree blooms only once every two years, with a brief flowering window from late spring to early summer, making each jar an exceptionally rare “liquid gold.” Shrinking due to disease and land clearing, Jarrah forests are producing less and less honey every season.
TA+20 represents medical-grade antimicrobial strength — suitable for wound healing, burns/sunburn, skin infections and oral conditions. The House of Honey maintains a strict unheated, unpasteurised, unadulterated and unblended process, preserving all natural enzymes, vitamins and antioxidants.
Hives are placed in Pristine Native Bushland, far from any industrial or agricultural contamination, ensuring zero pesticide residue. Every batch is independently tested by a NATA-accredited laboratory with its own TA activity report. Founders Rupert and Kim Phillips bring over 50 years of beekeeping experience — Kim is one of only three Accredited Honey Sommeliers in all of Australia.

| Texture / Flavour | Smooth and fluid, amber colour Malty nutty aroma, naturally sweet and pleasant, easy to eat |
Thick and creamy Dark cream to dark brown, earthy aroma, slightly bitter taste |
| Activity Rating | TA+20 (High Activity) Covers both H₂O₂ and non-peroxide components — broader spectrum |
MGO/UMF — relies primarily on a single MGO compound |
| Glycemic Index | Low GI — high fructose, low glucose; less prone to crystallisation, more stable | Higher GI; high glucose ratio, more prone to crystallisation |
| Antioxidants | 3x the polyphenol content of Manuka honey, significantly reducing oxidative stress | Relatively lower polyphenol content |
| Rarity | Blooms once every 2 years — among the world’s most scarce honey varieties | Annual bloom, supply relatively stable |
| Certification & Traceability | ✓ NATA-accredited batch testing + QR code traceable to individual hive | Varies by brand |

| Total Activity Rating | TA+20 (Medical-Grade High Activity)
TA+20 |
| Hydrogen Peroxide Activity (H₂O₂) | High — Jarrah honey’s unique advantage. Manuka honey has extremely low H₂O₂ activity. |
| Methylglyoxal (MGO) | Low (<100 mg/kg) — antimicrobial activity relies primarily on H₂O₂, not MGO. A fundamentally different mechanism from Manuka honey. |
| Polyphenols | Rich — Jarrah eucalyptus nectar is exceptionally rich in antioxidant polyphenols, at 3x the concentration of Manuka honey |
| Ingredients | 100% Pure Western Australian Jarrah Honey |
| Processing Method | Unheated, unpasteurised, unadulterated, unblended — all natural enzymes fully preserved |
| Colour & Texture | Amber, relatively fluid and smooth; may naturally crystallise at cooler temperatures — normal for raw honey |
| Aroma & Taste | Malty nutty aroma, naturally sweet and pleasant, smooth finish — easy to eat straight from the spoon |
| Moisture Content | Ideal at ≤18%; Jarrah honey typically lower than average honeys — more stable texture |

TA Rating Guide
Understanding Activity Levels
+
TA (Total Activity) measures the overall antimicrobial capability of honey, encompassing both hydrogen peroxide activity and non-peroxide activity. It can be measured on any honey with antimicrobial properties.
| < TA+10 | TA+10 | TA+20 | TA+30 | TA+35 |
|---|---|---|---|---|
| Table Honey | Wellness Grade | Medical Grade ▶ | High Medical Grade | Premium Medical Grade |
| Very low or near-zero antimicrobial activity | Soothes everyday minor discomfort, wound care, throat relief | Wound healing, burns/sunburn, skin infections, oral conditions | Resistant infections, deep skin repair | Highest antimicrobial strength, boosts overall health and vitality |
This product uses TA+20 grade Jarrah honey — medical-grade high-strength antimicrobial. For even higher strength, consider The House of Honey TA+30 or TA+35 range.

Storage
How to Store Your Honey
+
- Store at room temperature in a cool, dry place (15–25°C) away from heat and direct sunlight
- Keep lid tightly closed — honey is hygroscopic and will absorb moisture from the air, diluting its quality
- Always use a clean, dry wooden or ceramic spoon — avoid metal utensils (prolonged metal contact may affect natural activity)
- Shelf life: 3 years (sealed). Once opened, consume within 12 months.
- No refrigeration needed. Cold temperatures may accelerate crystallisation — this is normal and does not affect quality or activity
